WHere is a simplified version of a drink from the seasonal menu. Designed as a party-sized pre-mixed that's packed full of flavours associated with Christmas time, rendering it excellent for hosting a celebration. Reserve the remaining cordial you can use for breakfast cocktails, puddings, or to make another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 servings
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Cocktail (yields 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Syrup: Combine all the items inside a saucepan, heat until it reaches a gentle boil, mixing to dissolve. Then, remove from the burner and let it to reach room temperature completely. Decant to a sealable bottle, close it and store chilled, where it will keep for about four weeks.
Preparing the Batch Mix: Combine the specified liquid ingredients into a sizeable container, leave to sit for an hour, then strain , ideally through cheesecloth, making it fully clarified.
For serving: Pour 85ml from the premix into a cocktail shaker filled with ice, and stir carefully for about 60 seconds until cold. Pour into an frosted cocktail glass or equivalent, garnish with the cranberries adding the final touch with a quick spritz of the essential oil above the glass.
